Ingredients:
2 containers (9-12oz) unsweetened AIR-approved coconut yogurt
2 garlic cloves, finely chopped or crushed
1-1 1/2 Tbsp lemon juice
1 Tbsp fresh dill, chopped
1/2 English cucumber
Directions:
- Cut cucumber in half lengthwise and remove seeds. Grate cucumber onto a paper towel and squeeze out as much liquid as you can, set aside.
- In a bowl, add the coconut yogurt, garlic, lemon juice, dill, and grated cucumber. Use as a salad dressing or dipping sauce for veggies.
