This salad is refreshing, satisfying, and easy to make. This is something you can make ahead of time for a quick lunch, dinner, or addition to your meal!
Ingredients:
- 2 medium zucchinis
- 2 medium cucumbers
- 1/2 red onion thinly sliced
- 1 bell pepper julienned
- 1 cup grape tomatoes, halved
- 1/4 cup pitted Kalamata olives halved
- 4 oz. feta chees, crumbled
Directions:
- Spiralize the zucchini and cucumber and place in a large bowl. Cut any long pieces
- Add red onion and bell peppers
- top with tomatoes, feta cheese, and olives.
- Add Greek dressing slowly, according to preference.
