Spiralized Greek Salad

This salad is refreshing, satisfying, and easy to make. This is something you can make ahead of time for a quick lunch, dinner, or addition to your meal!

Ingredients:

  • 2 medium zucchinis
  • 2 medium cucumbers
  • 1/2 red onion thinly sliced
  • 1 bell pepper julienned
  • 1 cup grape tomatoes, halved
  • 1/4 cup pitted Kalamata olives halved 
  • 4 oz. feta chees, crumbled

Directions:

  1. Spiralize the zucchini and cucumber and place in a large bowl. Cut any long pieces
  2. Add red onion and bell peppers
  3. top with tomatoes, feta cheese, and olives.
  4. Add Greek dressing slowly, according to preference.
